ROAST COD

INGREDIENTS: FOR 4 PERSON

cod fillet 1 kg
white breadcrumbs 150 gm
fresh flatleaf parsley (finely chopped ) 6 tbsp
garlic (finely chopped) 4
lemon (zest, wedges) 1
butter (melted) 120g
lemon juice 1 tbsp
salt & freshly ground black pepper to taste
 
 
 SEASON THE COD

Preheat the oven at 220C/200C Fan/Gas 7. Season the cod with salt and pepper to taste.


 THE BUTTER CRUMBS

Mix the breadcrumbs with the parsley, garlic, lemon zest, salt and pepper, then add butter and lemon juice. Mix thoroughly with your fingers.


BAKING THE COD

Place the cod in a baking tray or ovenproof dish and press the buttered crumbs firmly onto the cod to form an even crust. Bake for 20–25 minutes until the crust is browned and the fish just cooked through.


SERVE

Serve immediately with lemon wedge.
